💛Ecofrost Tip: Prepare a delicious mash with our 3 mm potato flakes! 💛
We had a very good question at the show: how to make mash with our flakes? 👨🍳
Although our potato flakes are mainly designed as an ingredient in the production of chips, hazelnuts, gnocchi or pellet snacks, some of our customers wish to prepare them directly.
Here is our recipe for a tasty and quick mash:
🔥 Heat 350 ml of water and 400 ml of milk to around 75°C.
🍲 Add 125g of 3mm white or turmeric flakes to the hot mixture.
🥄 Mix for 2 minutes until creamy.
Optional: add a touch of butter if desired for an even creamier mash. 😋

Did you know that there are not only pre-cooked croquettes ? There are also croquettes with breadcrumbs !
But do you know the difference between these two products? 🤔
It's very simple...
Pre-cooked croquettes are made from puree to which we add a mix, then they are put in the fryer for pre-cooking.
Croquettes with breadcrumbs are also made from mashed potatoes, but they are covered with breadcrumbs containing gluten ( allergen) . They are not pre-cooked during our production process but the crispiness of their breadcrumbs will delight you when cooking them at home.
So, which one do you prefer to enjoy? 😁
🥔 Explanation of dry matter and weight under water! 🌟
Each batch of potatoes is tested for density and dry matter content using a starch tester. On average, our potatoes have 21% dry matter, but our goal is 29-30% to ensure crispy, less greasy fries.
📉 So we adjust the water content to achieve this superior quality. Every fry you enjoy is the result of strict standards and constant innovation!
